In my family I am the one who usually bakes because my mom absolutely hates baking. Even though she has this notebook with bunch of recipes and what’s ironic is that a big section of it is dedicated to all kinds of cakes, pies and even pizza. This is my aunt’s recipe and it doesn’t actually have directions so I just used simple logic and assumed some of the things. For example, it doesn’t say if the butter is supposed to be soft or melted . It just says: mix all the ingredients for the dough, spread it over the baking dish, fill it with the filling of your choice, cover it and then just bake it. In the original recipe instead of plums she uses sour apples, but you can use any sour fruit. I’m using plums from my mom’s garden. We had a great harvest this year so I’m making everything with plums: pancakes, pies, cakes and sometimes even oatmeal. To be honest, at this point I’m a little sick of the plums.<br />

The ingredients you will need for this pie:<br />

1 egg<br />
<br />
1 cup of flour<br />
<br />
50 grams of butter<br />
<br />
500 grams of plums<br />
<br />
150 grams of cottage cheese<br />
<br />
½ tea spoon of baking soda<br />
<br />
½ tea spoon cinnamon<br />

So, first thing you do is mix half of the cup of sugar and an egg until the sugar mostly dissolves. In the second bowl mix soft butter and cottage cheese. Then mix the contents of both bowls together. But of course you can just gradually add the ingredients to the first bowl. Don’t know why I used two of them in the first place. I probably thought that it would look better in pictures. But afterwards you get to wash more dishes.<br />

After you mixed all of the ingredients together start gradually adding the flour until the dough gets too thick for the mixer and then mix it with a spoon. Don’t forget to add baking soda to the flour.<br />

Prepare your working surface by dusting some flour over the dry surface, so the dough won't stick when it's time to knead.<br />

Put the dough on a working surface and start to knead. I ended up adding more flour because the dough didn’t have the consistency I wanted. And even after that no matter how much I kneaded it, it just kept sticking to my hands and the table. I know that usually the dough is not supposed to be sticky but with this one who knows. <br />

If you’re using frozen plums, defrost them in a refrigerator overnight. Or if you are an impatient person like me you can leave them on a table for an hour and then run cool water over them for several minutes to speed up the process. Just be sure to drain off the water completely. After that spread the plums over the unbaked pastry shell and then sprinkle them with cinnamon.<br />

Roll out the second piece of the dough and cover the pie. Make multiple punctures with a fork. Pinch the edges together. Bake in preheated oven for 30 minutes at 180 C until golden brown.<br />

We stopped and had a long chat with this young man, who was selling along the street with his mother. They come from a small village in the Carpathians, and come once a year to L'viv to sell the baskets that the family makes all year round. He shared a description of the process, and I happily bought a small one to bring home. The reddish varnish is more traditional, but I like the natural ones.<br />

Just a few photos from a trip back from Mykolayiv. We stopped along the road to purchase some honey and bee pollen. The man had a huge selection of honey and honey-related products for sale, and my friend Ihor (that's him tasting above) had extensive conversation about the types (buckwheat, acacia and others); the properties of bee pollen; and more. He also had homemade wine and walnuts for sale, though we didn't come home with either. According to Ihor, bees and honey were scarce this year in Poltava, his native region, so he stocked up on several varieties to take home.<br />

As we made the long drive, we noticed that each village tended to sell one thing or the other. We passed the village with a sugar plant, where big bags of sugar were for sale along the road. On the road we also saw truck after truck filled with sugar beets. In one village, potatoes for sale; in another, apples; another cabbages; and still another, sweet peppers.<br />
<br />
For mile after mile, the incredible black dirt of Ukraine stretched out before us with the remainders of corn, sunflowers and other crops; and some fields set afire to burn off crops before winter. I've traveled over a great deal of Ukraine on this trip, and find so many lovely parts that I'd like to explore.<br />

I had a chance to spend a few days in Riga, Latvia, this month and took time to go over to the city's large Central Market. Filled with Saturday shoppers and pretty friendly market venders, including the young helper above, the market was full of signs of autumn, so I wanted to share a bit of what I saw. And recipe of baking Easter-cake, which is still being used by us, comes from my great grandma. Notwithstanding that I never went to a church to bless the Easter-cake (I used to go the church with my grandmother, but it was not an occasion on a special religious feast) we keep on baking it and just having always a very solemn dinner on Easter. My great grandmother was born in a village not far from this place, but it is a small industrial (used to be industrial) town of Konotop. It is famous for its important railway junction (all roads to Moscow go through Konotop). It is also famous because Kazimir Malevich is said to have worked for two years in this town as a draughtsman and there is a water tower designed by Vladimir Shukhov. The city is located in the East of the country, in the region of Sumy. My grandmother and grandfather lived there, and my great grandmother lived in this house, which is located in a private housing area.</span></span></span><br />

Of course it is different for me than my mother. She used to live in that house since she was around 14 years old. For me it is about childhood. When I was young there were a lot of children coming from different cities (mainly Kyiv and Kharkiv) to visit their grandparents. There are different fruit trees left, but it is not about special gardening there-- we have flowers, some salads, but it is not the goal to grow fruits and vegetables, it is more about the atmosphere. When I go there I often think that it is really nice to have a private house. Because you feel your own planet there, but at the same time you are disconnected from the world.</span></span></span><br />

When Sarah and I began the Pickle Project, we were both clear in our minds that all of Ukraine interested us. The different ethnic groups who call it home, the different landscapes that shape food production and consumption, the food we ate, and most of all, the people of this complex and beautiful country. The two of us had a rare chance to catch up yesterday and we found ourselves returning to the sunny, warm month of July, 2011. <br />

That's the month, thanks to you--our Kickstarter backers-- and the Trust for Mutual Understanding, that we packed our bags and traveled by train throughout Ukraine exploring food and traditions. We began in Kyiv and headed to Donetsk, with side trips to villages in the Donbass, to a Greek-Ukrainian village in Maripol; and then to Crimea, getting to stay in a Crimean Tatar settlement. On to Odessa, then to L'viv and up into the mountains of the Trans-Carpathian region. We saw a great deal of Ukraine that month and met countless Ukrainians. We visited markets everywhere and filed lots of market reports. Tuesday, that is a million years ago, I passed by fences set out by
activists on the corner of Maidan (Independence Square), Institutskaya
and Bankovoya streets. There were several dozen serious people and, as
many simple sympathizers like me. I came close to the fence, stood on
tiptoe and peered over it: at the other side there was an empty street,
and a row of policemen in black uniforms further away. It was a fairly
infernal display, but I was not allowed to enjoy it fully. Literally
after 30 seconds of my observation I was approached by a very active and
smiling young girl who in a very friendly manner asked, "would you like
to have tea?" In her hands she was holding a tray with disposable cups
from which clouds of steam were rising into the air. I politely declined
her offer, but she insisted and repeated, "and with cookies?" This meant
the following: if you are at least for a minute doing something needed
now by ‘gromada’ (Russian words ‘society’ or ‘collective’ are
absolutely not equivalent, and I do not even want to use them), and so,
if you work for even for a minute for the benefit of ‘gromada’ –
‘gromada’ immediately begins to take care of you. And you will not
perish.</span></span></span></span></span><br />

today, I saw this mechanism from the inside, on a barricade closest to
my home - a small outpost of the Maidan, one of many around the square.
Around 6:30 PM, when a spontaneous gathering of protesters started near
the barricade (speaker, standing on a car, tried to convince people
supporting the government party who gathered in the park to go home ), I
decided to show my daughter the revolution – luckily, the frontline
came very close to my house. We arrived around 7 PM, warmly dressed and
with a child-sized flag. Scene of the spectacle looked quite heroic:
truck baffling the street, determined people in helmets, barricade made
of benches from the nearby park, and an army tent. The only thing that
slightly spoiled the romance - soldiers of the revolution, standing in a
chain they were all eating bananas. It looked a bit strange and very
funny at the same time. And then I saw the source of bananas - a woman
in a coat with a bag from the Selpo supermarket chain. And then another
one - with small pies, you know, ones that are sold on the street. She
walked down the line with the package and offered them to everyone.</span></span></span></span></span><br />

somehow suddenly I thought that it would be necessary to bring some tea
for the guys, and went home. At 7:35 PM my friends and I returned to
the barricade with two buckets of tea, as well as with sugar and lemon.
One of the benches has been brought out of the barricade, on the side.
On it there was a box with homemade sandwiches and a grandfather poured
coffee from a small thermos. Our tea was greeted very warmly, as we
poured it, a man appeared with the patties filled with poppy seed (they
were stored in the same box as the homemade sandwiches) and there were
even more homemade sandwiches arriving, but different ones. Everything
started to look very well. At 8:20 a car drove up, obviously from
headquarters of the protest movement. A man exited from the car dressed
in a fantastic sheepskin jacket, belted with Hutsul leather belt. He
delivered three military jerry cans, each with up to 20 liters capacity,
full with broth, soup and tea. Besides that the car brought a porridge
made with millet and fried with lard. And a real aunty cook began to
serve it with a huge ladle on disposable plates. A woman volunteer who
called the aunty cook ‘mother’ started distributing the plates. First to
the ‘soldiers’ in the line. Then to everybody around the barricade,
including supporters, onlookers and Titushki who came from work on their
way to sleep. Titushki (government backed young men who are responsible
for provocations) recoiled in horror and accelerated pace. At the same
time, people brought baguettes, sandwiches and more patties. Porridge of
oatmeal was still warm. By 8:50 PM all were full, the music continued
to play, and two beautiful and cheerful girls began to dance and sing along at yet another Svyatoslav Vakarchuk`s song. Picket turned into
something that usually happens during our revolutions. It became some
sort of wedding , and in its phase when the newlyweds have already left,
and the table is just bursting from the weight of food, and the guests
are already full of fun and are assessing which songs they should start
singing. Ten meters from the protesters stood a row of policemen, and
right behind them a row of riot police who looked like astronauts. They
were standing too far from the barricade, but the cops sadly smelled
tasty vapors, shifting from foot to foot, staring morosely at what is
happening in front of them - the smell of porridge was just intoxicating
and filled the street. I trudged home with an empty bucket in order to
put my child to bed (second bucket, still full with tea, I left as my
present for the revolution), on my way home I saw at least three couples
with plastic bags in which I could clearly recognize stacked
sandwiches . Based on the amount of food the picket could have stood
there for several days. And we have not even shown our best. </span></span></span></span></span><br />

you understand what I am trying to say. Of course, this barricade is
purely symbolic. And the ‘fighters’ occupying it are not real fighters,
but just simple guys in construction helmets and without the slightest
hint of weapons in their possession. And this barricade can be
dismantled in blink of an eye. But, you know that it will as easily
restored in no time. As many times as required. Pledge for this is the
amazing self-organization of our people, most clearly evident in the
supply of food anyone, even random people who are sympathizing with the
protest movement. There is abundance of food. But the main thing is that
I have seen where this food comes from. It is instantly supplied by
‘gromada’. And this is demonstration of force, the most peaceful and
the most powerful at the same time that I have ever seen.</span></span></span></span></span><br />

When we began the Pickle Project, we began with an idea that the ways in which Ukrainians approach food and sustainability were something to be proud of, something Americans could learn from. But our 2011 conversations in Kyiv, Donetsk, Odessa and L'viv helped us understand more: that talking about food, eating together and sharing a meal were fundamentally democratic activities, making us all equal and providing a safe place to share ideas, even with strangers. <br />

Like many of you who care about Ukraine, I've spent the last two weeks checking out my Facebook feed (for English speakers, check out <a href="https://www.facebook.com/euromaidanEN">Euro-Maidan in English</a> on Facebook) reading the <a href="http://www.kyivpost.com/">Kyiv Post's </a>continous online coverage, and hearing from friends and colleagues in Ukraine about the protests in Kyiv and throughout the country. And, if you looked closely, even from thousands of miles away, you could see our beliefs about food made real. <br />

This post is just to share a few images from the protests in the center of Kyiv, just blocks from where I lived for a few months. Dozens, if not hundreds, of people (including Miss Ukraine 2013) have stepped up to make sure everyone, even policemen, are fed warm soup or served a cup of tea. I've read that citizens from Poltava and other locations have sent food, local restaurants have gone into the streets to serve free food, and in the video at the end of the post, Adli from Crimea makes plov. What have I seen? As you can see here, cold sandwiches of meat and cheese, homemade varenky in a pot carefully wrapped in newspaper to stay warm, kasha, plov, those boxes of cookies seen in every subway underpass; cups of tea and coffee, and giant cauldrons of borscht, borscht, borscht. But more importantly, what I've seen is volunteer action, of a kind that is rarely seen in Ukraine. Incredible to watch. On this cold night, our hearts are with you.<br />

I had departed <st1:country-region w:st="on">Ukraine</st1:country-region>.
It wasn’t until I was harvesting young shoots in the spring, and cattail pollen
in the early summer, that I began to learn about the way in which the cattail
and <st1:place w:st="on">Ukraine</st1:place>
are deeply connected. Also known as “Cossack asparagus,” a wild edible’s guide
to the plants of Poland (<i>Dzikie Rosliny
Jadalne Polski: Przewodnik Survivalowy</i>) notes that a 19<sup>th</sup>
century traveler to Ukraine commented that, “cattails were eaten in spring with
religious passion, and they were visible everywhere, stacked in each yard.” A
simple search into cattail as an edible pulled up multiple references to
Cossack asparagus and traditional recipes. </div>

For my first attempt, we gathered small shoots, cleaned and washed, and served
a simple sauté with stinging nettle. Though the fall doesn't present as many opportunities for harvesting shoots and pollen, the rhizomes are busy storing food to make it through the winter months. Next time I travel through Ukraine, I will certainly be looking for evidence
of this past tradition!</div>

I know, Tokyo is far afield from Ukraine, but my work brought me to Japan, and luckily to this market. An amazing variety of foods, including an amazing variety of pickles. Like Ukraine, Japan is a culture that has often made do with foods at hand, which in this case includes pickled, fermented and dried everything, from squid to eggplants. It was amazing to see, taste and smell so many different flavors along the way and I thought Pickle Project fans might enjoy a look as well. <br />

I just spent a few days in Kyiv on this trip to Ukraine, as the May holidays approached. Kyiv is increasingly an international city and although I didn't get to any markets, a couple quick snapshots convey the changing nature of Ukrainian food in this capital city. <br />

Somehow over the last year and a half, many the food carts in the city all adopted a sort of Ukrainian village style--so now you see these (above) faux houses on faux wooden wheels all over the center. In the year or so before that, tiny expresso coffee trucks popped up--they're now a really common sight. But because it's spring, I saw these coffee trucks doing double duty--they were also selling kvas from blue and yellow barrels. So the coffee trucks have replaced the once familiar big kvas tanks that were a harbinger of spring.<br />
<br />
Perhaps most surprising was my encounter with a raw food restaurant, just off Maidan. I pondered villagers eating their dandelion greens and foraged berries while I ate my green soup and fresh pressed juice. Ever-changing Kyiv-- a reminder that our food cultures are always combinations of old and new.<br />

This past week, I was in Donetsk, in eastern Ukraine, where spring has finally sprung. The combination of the May holidays with upcoming Orthodox Easter has meant a flurry everywhere of cleaning, painting, and most important, planting.<br />
<br />
We didn't ever get to a market visit, but I found it interesting that in many part of Donetsk, a highly industrial city, it still feels like a village, with residents intensively cultivating their small plots. Here's a bit of what I saw. At the top of the post, Lyumilla cultivates her front yard, just half a block away from a factory.<br />

And as we walked along another part of the city, on a colder gray day, we saw many people, mostly women, out planting and preparing.<br />

And turning a corner, a place that felt exactly like a village. Jars of pickled mushrooms were tucked back into the back of a market stall by a bus stop and this woman brought flowers from her garden (that day, brilliant tulips) to sell in the city center. <br />

It was Palm Sunday and the city was filled with residents carefully carrying their bundles of pussy willows in honor of the day, like these two girls on the mashrutka.<br />

<span style="font-family: "Trebuchet MS",sans-serif;"><span style="font-size: small;">In early December, a small group of us gathered in Washington, DC (thank you Portrait Gallery and American Art Museums for having such a great, friendly space to work in) to brainstorm and plan for the future of the Pickle Project. Joining Sarah and I were Christie Bond and Anne Laesecke, both returned Peace Corps volunteers from Ukraine, and Eugene Chervony of the Museum of Natural History in L'viv and currently a Fulbright Scholar in Museum Studies at George Washington University.</span></span><br />

<span style="font-family: "Trebuchet MS",sans-serif;"><span style="font-size: small;">We've taken our first steps to becoming a non-profit organization, with
the mission of encouraging thoughtful conversations about food in Ukraine and elsewhere. We incorporated as a charity in New York State, with
Christie joining Sarah and I as the fledgling board. We're working on
the next steps, our IRS non-profit status and hope to have that
paperwork filed soon.</span></span><br />

<span style="font-family: "Trebuchet MS",sans-serif;"><span style="font-size: small;">Using survey results, feedback from audiences in Ukraine and the US, and our own diverse perspectives, we looked at issues that might affect our work in Ukraine and here (both threats and opportunities), and brainstormed a long list of ideas and possibilities. be far easier than following the signs of moving animals, it took me a while to
find what my counterpart Maria described as my “mushroom eyes.” Not unlike
tracking animals, it’s important to wait for the right conditions – rain after
several warm days, and then the hope that your mushroom eyes are working! As
Rezendes says, “If you know an animal well, you will know where to look for it

fresh and dried. In addition, when the weather is right, any location will do.
While on a weekend retreat near the <st1:place w:st="on">Desna</st1:place>
river, one of the program planners mentioned he had seen oyster mushrooms near
the sanatorium entrance, so we happily ended our meeting in search of them. He
brought them back the following day in the form of a soup that his wife had

passionate foragers), I am reluctant to go on my own. Luckily this fall was
particularly rich with giant puff ball mushrooms (which have no poisonous
look-alikes). Rezendes believes that through tracking, a person can develop an
intimate bond with the animal, and furthermore develop a more keen
understanding of their relationship to the natural world. I believe the same
can be said for foraging. Through the collection of mushrooms, one can develop
a keen sense of their environment.</span><br />

Just off a leafy boulevard in Simferopol, you will find
Crimea State Medical University. Every year, this small medical school welcomes
hundreds of foreign students from around the world. Young people journey from

Nestled on the second floor of the university’s high-rise
dormitories, there is a cafe that caters to foreign students, serving pan-Asian
dishes. Wandering up flights of stairs and through darkened hallways, we
managed to find the little café recommended to us by several friends. </div>

It was here, over curries and naan, that we met Seethala
Devi, who just finished her medical degree a few days before. Seethala, 27, is
Malaysian and comes from the Selangor district, about 45 minutes from the
capital, Kuala Lumpur. <span style="mso-spacerun: yes;"> </span>She has a warm
eyes and a kind smile. </div>

Seethala first came to Crimea for her pre-medical
training and decided to stay on for her full medical instruction. Coming here
was really hard, at first, she said. It is tough to be alone in a new place
with a new language and environment. Then, she told us, she started finding all
the positives. “I like it here; I have really enjoyed it.” The hardest part now
is missing her family, as she had not been back to Malaysia in four years.<span style="mso-spacerun: yes;"> </span></div>

Getting used to Ukrainian food was part of the adjustment
to life in Crimea. Seethala smiled as she recalled “When I first came, I became
quite plump.” But, as it turns out, she explained, eating local food became a
bit like a diet, with simple tastes, fresh vegetables and less oil than many
Asian dishes. </div>

She works long shifts at the hospital and packs along
with her kasha, cookies vegetables and tea, for her breaks. “I actually really
enjoy it. I will bring along some bread and I have a complete meal.” Eyes
shining, she admitted that she has also developed a penchant for Ukrainian
sweets (as many of us do!). Once in a while, for treat, Seethala stops by a local
bakery for a sochnik, a puff pastry filled with the sweetened pot (cottage)
cheese. </div>

She still makes favorites from her native Malaysia,
however, but access to spices for traditional dishes is limited. Once in a
while, she will stop by the café for a quick meal alone, before heading to the
hospital and meeting with friends. Like many restaurants in Ukraine, the café
often does not have everything on the menu but does has a few daily specials.
“It is a gamble, sometimes” Seethala told us and advised us to ask for “what is
nice?” Then, you will get what is freshest. </div>

After seven years in Crimea, she is preparing to go back
to Malaysia and was hoping for an internship in Sabah, the oil rich province in
the Northeastern part of the country. <span style="mso-spacerun: yes;"> </span>It
will be a transition too, she said. “I am really going to miss it here.” </div>

spoken by members of the Ukrainian diaspora, living in the US and Canada as “kitchen
Ukrainian,” a not-quite contemporary Ukrainian, often with English or other influences. It is also meant to reflect the fact that many first and
second generation Ukrainian Americans and Canadians learned Ukrainian from their
mother or grandmothers, usually while they helped with cooking. Indeed, several friends with Ukrainian roots that grew up in the US and Canada have shared these kinds of insights. </span></div>

actually use the term “diaspora language” to describe the dialects or variations of languages
spoken in places of migration. These languages evolve, as all languages do, absorbing new influences and changes to their community.
In the context of rapid change in Ukraine, as well as long absences from the
country, language and food practices seem to be the most tangible connection to
this culture for people with Ukrainian roots living in other parts of the world. </span></div>

Last year, the apple tree in our backyard here in the Catskills was heavy with apples, with every branch full. This year, there's barely an apple to be seen out there, due to an late frost last spring. So despite the scarcity of apples in my immediate neighborhood, fall always seems a good time to think about apples.<br />

Berries and cherries may seem like the most prevalent fruits in Ukraine as they're so scrumptious, prevalent and available in the summer months. But apples take center stage come fall. You can eat them fresh, picked from the tree in your dacha's garden; you can make apple cakes; you can dry them, and use them to make a compote from that; you can have pickled apples, or make apple wine or brandy. So rather than those big, hard supermarket apples, Ukrainians have all these ways to make the flavors of real, taste-filled apples last the year-round.<br />

Dried apples are just one part of what makes uzvar, a drink made from soaking dried apples, plums and perhaps pears in liquid. The drink often has a smoky taste, from the way the fruits are dried, and to me, is a bit of an acquired taste.<br />

A little web research told me more about Ukrainian apples--several of these heirloom varieties can also be found in North America. On several sites describing apple varieties, I wondered whether apples whose origins noted as Russian were perhaps Ukrainian. From Crimea, there's the Kandil Sinap, also <span style="color: #052501;"><span style="color: black;">called Jubilee. Discovered growing wild in Ukraine in the 1700s was the Alexander apple, which came into Britain in 1805; and then made its way to the United States. </span></span><br />

<span style="color: #052501;"><span style="color: black;">One of the most notable apples was the Reinette Simirenko (above) which, some agronomists say, may be the same as Woods' Greening, an American apple. But it may have originated in P.F. Simirenko's Ukrainian garden. I could just find a bit about Simirenko, who evidently was an expert in fruit crop breeding in Ukraine but whose work was opposed by Soviet horticulturist <span class="srTitle">Ivan Vladimirovich Michurin, leading to Simirenko's imprisonment and death in the 1930s. But evidently the taste of the Reinette Simirenko is out of this world--Soviet cosmonauts snacked on it in space! So perhaps it's a carefully wrapped Reinette Simirenko you glimpse in this video showing ground level tasting of cosmonaut food.</span></span></span><br />

By now, via screen or page, it seems everyone has taken in
the vast, almost magical fields of sunflowers in Jonathon Safran Foer’s <i style="mso-bidi-font-style: normal;">Everything is Illuminated</i>. Love or
loathe <i style="mso-bidi-font-style: normal;">Everything is Illuminated</i> (not
to cop out but I find myself squarely on the middle ground, except where Eugene Lutz is concerned.), it set an
imagination of the Ukrainian countryside as a sunny, golden sea. </div>

I must admit, there is something sort of dreamy or wistful
about sunflowers, their vibrant yellow color, the way they are said to lift their
heavy heads together, following the sun across the sky. (This tracking of the
sun is called <i style="mso-bidi-font-style: normal;">heliotropism </i>but there
appears to be lack of consensus as to whether sunflowers are true heliotrophs
or maybe only in early life stages. As a child of the American Midwest, I swear that I have witnessed this. Any sunflower scientists out there that
can clarify?) </div>

<span class="hps">In the genus Helianthus (sound familiar?) with
sunchokes, sunflowers originate in the Americas but were brought to Europe by
those intrepid Spaniards in the 16<sup>th</sup> Century.<span style="mso-spacerun: yes;"> </span>According to Cullinaria, edited by Marion
Trutter (2006), sunflowers came to the Dnieper Valley with Peter the Great, after
a trip to Western Europe in the mid 1500s. Peter, who was something of a sunflower
aficionado, was fond of their bright colors but they soon emerged as an
important food source. </span></div>

Sunflowers, <span class="hps"><span lang="UK" style="mso-ansi-language: UK;">соняшник</span></span> in Ukrainian, are grown for seeds, which are pressed
for oil or cracked and roasted as a food stuff for people and animals, particularly poultry. Referencing my trusty Encyclopedia of Organic Gardening (Rodale,
1971), I learned that sunflowers are highly nutritious, very rich in protein,
calcium, phosphorus, thiamin, riboflavin and niacin and are an important source
of linoleic acid (good for hair and skin, by the way). Sunflower oil is
generally cold pressed, which helps to retain the oils nutrients and vitamins. <span style="mso-spacerun: yes;"> </span>In my experience, sunflower oil is the oil of
choice among Ukrainian cooks. It complements fresh veggies, as well as meats. </div>

Oil production began in Ukraine around 1835 and that the Kherson
and Zaporhiza regions were critical to fat supplies during the Second World War
and in the Soviet Area. Overtime, sunflower oil production has remained an important
economic resource in Ukraine, though the industry has struggled to keep pace
with crop resistance and industry standards. All that said, according to <a href="http://www.prnewswire.com/news-releases/ukraine-exports-51-of-world-sunflower-oil-169137326.html">this
recent post from PR Newswire</a>, Ukraine now produces a quarter of world’s
sunflower oil, comprising 51% of the global export market for the commodity.
Interestingly, India is the top consumer of Ukraine’s sunflower oil. A 15%
decline in production is anticipated for Ukraine’s sunflower oil production
over the next year, based on adverse weather projections.<br />

Whole sunflower seeds are a very popular Ukrainian snack and are found
studding breads and sweets. Markets stalls feature a dizzying array of
varieties and preparations. On street corners, kerchiefed grannies sell sunflower
seeds for birds. </div>
